Probiotics

Probiotic bacteria or simply the live cultures used in yogurt. These are the stuff that makes yogurt a "living food" Different brands uses different probiotic namely lactobacillus acidophilus, streptococcus thermophilus and lacto bacillus bulgaricus and Bifidobacterium are the common strains of cultures found in yogurts.

In this section I like to highlight the optimum temperature of some of these bacteria strains and hope to share some light to the use of yogurt starters for making yogurt.


Optimum Growth Temperature
Understanding the temperature will allow you to understand how to experiment your yogurt starter with the method you use to incubate your yogurt. Note: you will see that a using yogurt starter with acidophilus  will have very good sucess result because of its lower optimum growth temperature.

Streptococcus Thermophilus -
optimum growth - 40 to 45C
Lactobacillus Acidophillus-
optimum growth -  30 to 37C
Lactobacillus Bulgaricus-
optimum growth -  45 to 50C
Bifidobacterium- 
optimum growth - 37C to 41C  maximum growth - 43C -45C
